The Versalles estate comes from a long coffee tradition thanks to its coffee grower Jaiver Arias. They collect the ripe beans by hand, submerge the coffee in water to remove the less dense beans and finish the process with a 100-hour fermentation in the absence of oxygen and a 25-day drying in the sun.

History
The Versalles farm comes from a long coffee tradition, initially it comes from an inheritance from Don Jaiver's parents, later, he bought the share from his brothers and that is how he started working. When he began working the farm, he had already planted common Arabica and Caturro varieties, later Colombia, Castillo and Rosado bourbon varieties were planted. For about 7 years he has been selling his entire farm's harvest as natural coffee. Due to the prices he has managed to achieve, he has been able to sustain the farm.
Don Jaiver is a 56-year-old coffee farmer who works hand in hand with his wife on the Versalles farm. From a very young age he started in the world of coffee as a coffee farmer and since he was 20 years old he has worked in different jobs on farms and on his own land. Today his wife is an important part of the coffee plantation because she is the administrator of the workers and collaborates in the coffee processing tasks.
Tasting note
Its fruity enzymatic fragrance stands out, chocolate base, notes of red fruits,
citrus fruits reminiscent of an orange, with a liquorish background and medium residual flavor;
It is a sweet, complex, balanced coffee, its acidity is juicy and its body is silky.
Process
The ripe beans are collected by hand, the coffee is submerged in water to remove the beans that are less dense. Afterwards, the water is removed and in a hopper it is transferred to beds, where the green or green beans that can be having picked up by mistake. They are then transferred to cans, fermented in the absence of oxygen and fermented for 100 hours, and finally dried on African beds for 25 days in the sun.
